Early Harvest Extra Virgin Olive Oil (EVOO) is an unfiltered oil. It is extracted from the first olives harvested at the end of October or the beginning of November. At this time of year olives are still green or beginning veraison (1) and do not contain the amount of fat characteristic of their maturation.
